This meal took me less than 15 minutes! So easy!! Timer was set at 15 and when I was done it had 3:56 minutes left on the clock. It is great!
This honestly could not be easier. Everyone has eaten ramen noodles and everyone knows that the packet of seasoning is TERRIBLE for you so throw that out, right away.
You'll Need:
- Two Packets of Ramen Noodles (sans the seasoning)
- 6 Large Mushrooms sliced
- 2 cups of carrots (mine were fresh that I chopped and cut up myself)
- 2 cups of edamame
- 2 green onions chopped
- 1 cup of beef broth low sodium
- 1 chicken breasts sliced thin
Boil water per instructions on your ramen packet.
In a skillet pan spray with PAM, then sauté your mushrooms, carrots, edamame and green onions till cooked, covered. You want them to still have a bite to them and not mushy (btw I hate that word but best to describe it).Once done take out veggies and cook chicken, covered. This chicken is so thinly sliced that it will cook very quickly 3-4 minutes, pour in 1/2 cup beef broth and just heat. Don’t overcook!

You might wonder why I am using beef broth and chicken. It’s because once the flavors combined they are actually very good and gives it a different flavor.
Drain noodles and toss everything together. Seriously, so easy. Noodles are the best! Great combination!!
