    Default Stocking the Mexican Kitchen (Must-Haves)

    In the Pantry:
    > Beans
    > Cactus or nopalitos
    > Chilies
    > Chili Powder
    > Corn husks (dried)
    > Cornmeal
    > Rice

    In the Fridge:
    > Beef
    > Cheese
    > Chicken
    > Chorizo sausage
    > Ground Pork
    > Sour cream
    > Tortillas


    Fresh Produce:
    > Avocados
    > Bell Peppers
    > Chile Peppers
    > Cilantro
    > Mangoes
    > Papayas
    > Plantains

    Classic Mexican Dishes:

    Arroz Verde: rice side dish flavored with chicken broth, garlic, onion, cilantro and mild green chilies.

    Burritos: flour tortillas wrapped around a filling of shredded meat, beans and cheese.

    Ceviche (cebiche): appetizer of fish “cooked” in acid, such as lime juice, and mixed with tomatoes, chilies and capers.

    Chilies Rellenos: roasted and peeled mild green chilies are filled with cheese or meat, dipped in batter and fried.

    Chimichangas: deep-fried burritos.

    Churros: strips of sweet dough are deep-fried and sprinkled with cinnamon-sugar.

    Flan: smooth, rich dessert custard coated with a caramel sauce.

    Salsa: cooked or fresh sauce usually made with tomatoes or tomatillos and flavored with garlic, onion, chilies and cilantro.

    Tamales: corn tortilla dough filled with meat, vegetables, beans, fruit or seafood is steamed inside dried corn husks or banana leaves.

    Tostadas: fried corn tortillas topped with refried beans, meat, tomato, lettuce, cheese and salsa.
