1/2 cup vegetable shortening
2/3 cup granulated sugar
1/2 teaspoon salt
3 tablespoons peanut butter (regular)
1/2 cup old−fashioned Quaker oats, pureed into flour
1 cup all−purpose flour
Creamy Filling Ingredients:
1/2 cup peanut butter (low fat, if available)
3/4 cup powdered sugar
1 tablespoon fine graham cracker crumbs
Preheat the oven to 325F.
To make the cookies, Cream the shortening and sugar in a bowl with an electric mixer. Add egg, salt, and peanut butter and continue beating until well blended. Add oat flour and all purpose flour, mixing well to form a dough.
Roll the dough into 1 inch balls side by side on parchment paper and then Press them flat using the bottom of a glass, forming "nut shaped" cookies. Bake 8 1- 10 minutes, or until light brown around the edges.
While they're baking, mix up the filling by measuring everything into a bowl and beating with a hand mixer until light and fluffy. Once the cookies have cooled, spread the filling evenly on cookie, top with another, Enjoy!
