French Sweet and Sour Sauce
this is great served over pork, seafood, chicken or even steak!
French Sweet and Sour Sauce
2 cups fruit (whole berries or larger fruit peeled and cut into 1/2-inch pieces)
2 tbs butter
1 green onion, minced
2-3 tbs sugar (depending on fruit chosen and how sweet it is)
3 tbs wine or cognac
3 tbs vinegar
generous pinch of salt
Place all ingredients in a small sauce pan. Bring just to a boil over medium-high heat, then reduce heat to low and simmer until fruit is very tender (10 - 20 minutes). Puree mixture in a blender. If the using berries, strain mixture through a fine mesh sieve. Taste and adjust seasoning and tartness. Makes 1 1/2 cups. Keeps in the fridge for at least two weeks and freezes beautifully!mos
