Tahini
Tahini Paste
For every 1 cup of lightly toasted Sesame Seeds (hulled will give a smoother paste with a milder flavor) add 2 to 3 Tablespoons Olive Oil (Begin with 2 Tablespoons and add more if needed to get to the desired consistency.) Process to a smooth paste. This will make approximately 3/4 cup Tahini.
To toast sesame seeds -- Spread the sesame seeds on a shallow baking tray and bake in a preheated 350 degrees F oven , shaking frequently, until fragrant. (around 5 minutes in my oven) Do not allow them to turn brown. Cool before placing in processor.
Store in a tightly covered jar in the refrigerator. Will keep several months.
