Coconut Cream Pudding Mix

Hehe, in case no one has noticed yet, some of us girls got together today and decided to have a posting war here on the site to drive up our experience points. I want the cute little pinch/dash spoons!

So here's an easy recipe for making your own coconut cream pudding mix

3 cups nonfat dry milk
4 cups sugar
1 tsp. salt
3 cups cornstarch
1 1/2 cups shredded unsweetened coconut
1 tsp. coconut extract

Directions:

Mix the extract & shredded coconut until extract is completely absorbed. Combine all the ingredients together, mixing well.


To Make:
Coconut Cream Pudding

Add 2/3 cup mix to 2 cups Cold milk. Heat in a saucepan over medium heat stirring constantly until thickened.

Cool, then serve.
