Make your own Lemon Tart Mix

1 cup of Sugar
cup flour (Gluten free or normal)
1 cup of desiccated coconut

Combine all the ingredients together or layer them if you want to give them as a jar gift. (makes 1 mix)


Lemon Tarts
1 pkg mix
4 eggs
cup melted butter
3 tsp of grated lemon rind
1 cup of (lemon, orange juice combination)
1 cup of milk

Put all ingredients in a food processor, blending until well mixed

Pour into greased pie plate and bake at 350 for 35-40 minutes, or until lightly golden and firm to touch.

Serve warm or cold with yogurt and berries or Coconut Whipped cream
