2 Tablespoon olive oil
3 lb boneless skinless chicken breasts, cut into 1/4-inch pieces
2 pkg taco seasoning mix (MYO!)
1 red bell pepper, chopped (1 1/2 - 2 cup)
2 cans black beans, drained, rinsed
1 medium onion, diced
2 c. whole kernel sweet corn (Frozen or canned) If using canned- DRAIN!)
3. cups shredded Mexican cheese blend
1/3 cup chopped fresh cilantro (optional- but really makes the dish!)
In a very large skillet, heat olive oil until hot, add onion, saute till translucent, add chicken pieces. Cook chicken 4-6 minutes or until no longer pink. Add diced tomatoes juice and all, bell pepper, black beans, whole kernel corn, taco seasoning. Reduce heat and simmer 3-5 minutes, stirring occasionally, until everything is heated through.
Place tortilla on a plate, sprinkle liberally with cheese, add Beast Filling, (after all, you're feeding hungry beasts, aren't you?!).
Fold up and serve. These can be made ahead of time, wrapped in a papertowel and placed in a cooler (to stay warm, rather than cold) or they can be refrigerated and served cold. They're yummy either way.
This will easily serve 14 Hungry Teenage Boys.
