Pumpkin Donut Drops

We love the flavors of Fall, it’s the only time of year when I crave the sweetly spiced pumpkin, apple fritters and donuts. Perhaps it’s the beautiful foliage, the crisp air, the leaves rustling in the wind, in any case, these delicious donut drops really hit the spot!

While this one seems to have a lot of ingredients, it’s still pretty quick to throw together with minimal effort, particularly for fresh donuts. If you’d like to create a make ahead mix combine all of the dry ingredients, including the sugar into a mason jar or ziploc bag until needed.

You’ll Need:
2 eggs
1-1/4 cups sugar
2 tablespoons shortening
1 cup canned pumpkin (not pumpkin pie filling)
2 teaspoons white vinegar
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 cup dry milk powder
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup lemon-lime soda (like sprite or 7up)

Oil for deep-fat frying (We use Canola)

Additional cinnamon sugar for rolling

In a large mixing bowl, beat eggs, sugar and shortening together until smooth. Add the pumpkin, vinegar and vanilla.

In another bowl, combine all of the dry ingredients; add to the pumpkin mixture alternately with soda.

In an electric skillet or deep-fat fryer, heat oil to 375°. Drop teaspoonfuls of batter, a few at a time, into hot oil.

Fry for 1 minute on each side or until golden brown. Drain on paper towels; roll in cinnamon sugar while warm.

Yield: about 7 dozen.
