    Thumbs up Your Pork Chops ~ Pork Chop and Potato Bake

    Pork Chops
    Go ahead make that value pak any way that you like. Reserve the two largest for the next recipe.

    Pork Chop and Potato Bake
    Reserved pork chops, diced
    4 potatoes, sliced in rounds
    4 carrots, sliced
    1 onion, sliced thinly
    4 tbs butter or margarine
    1 cup shredded cheese -- your choice, it's all good!

    Heat oven to 400 degrees. Grease a 9 X 13 pan and add just enough water to barely cover the bottom of the pan. Layer potatoes, onions, and carrots in the pan. Dot with the butter. Place in the oven and bake just until the potatoes start to brown, about 25 minutes. Remove from oven and gently mix in the diced pork chops (don't burn yourself!), top with shredded cheese, and return to the oven for another 15 minutes or until all the cheese is melted.
    this tastes like a stuffed, baked potato and is so good. it's even good heated up the next morning for breakfast

    Thanks, sounds like a great meat stretcher recipe, trying to get DH used to some of these. He still thinks that meat , starch, veggie should occupy 3 different places on your plate. Although he seldom complains knowing we need to cut back on spending.

    he might like this one then since it is not your classic casserole. everything is 'loosely' cooked, but there's only a 'hint' of meat. you could save an extra pork chop and cook on the side for him OR serve this up the next morning with eggs! YUMMY!

    This is great. I always shied away from buying the large packs of pork chops because I only knew one way to make them. Next marked down pack that I see is going to be bought and I'm making this.

    hun-ney...there's lots of recipes here for pork chops. just do a forum search. I posted a yummy one last week in the cooking for two forum that you could try.
