    Thread: Apple Relish

      Default Apple Relish

      6 cups apples-chopped
      2 green peppers-chopped
      1 cup onions-chopped
      2 red sweet peppers-chopped
      1 tsp mustard
      1/2 cup white vinegar
      1 cup water
      1 1/2 cups sugar
      1 tsp salt

      1. Combine all ingredients in a heavy bottomed large saucepan; mix well.
      2. Heat to boiling, then lower heat to medium. Simmer for 30 - 40 minutes.
      3. Pack in hot sterilized jars leaving 1/2 in. head space.
      4. Process in water bath for 20 minutes.
      5. Place hot jars on a towel on kitchen counter to cool. Listen for the 'pings' of the jars sealing.

      Variation on this is:Spicy Apple Relish
      6 cups apples-chopped
      1/3 cup onion-diced
      1 jalapeno pepper-seeded and minced *optional*
      1/4 cup raisins
      1/4 cup packed brown sugar
      1/4 cup water
      1 tbsp lemon juice
      1/2 tsp ground ginger
      1 tbsp fresh ginger-grated
      1/2 tsp ground cinnamon
      1/4 tsp ground cloves
      1/8 tsp pepper
      pinch of salt

      1. Combine all ingredients in a large heavy bottomed sauce pan. Mix well.

      Yield: 6 servings
      Can serve warm or cold. Especially good with pork.
