Gluten Free Chocolate Cupcake Mix

Make your own delicious Gluten Free Chocolate Cupcake Mix for gift basket additions or to have on hand for your own friends and family.

You’ll Need:
Dry Ingredients
* 1 1/2 cups white rice flour
* 3/4 cup millet flour
* 1/2 cup unsweetened cocoa powder
* 1 teaspoon salt
* 1 teaspoon baking soda
* 1 tablespoon baking powder
* 1 teaspoon xanthan gum
* 1 1/4 cups white sugar

Wet Ingredients
* 4 eggs
* 2/3 cup sour cream
* 1 cup milk
* 2 teaspoons vanilla extract

Combine the dry ingredients in a large ziploc bag or Mason Jar mixing well. Label with directions to complete.

Directions
In a medium bowl beat eggs, sour cream milk and vanilla until smooth. Stir in the contents of 1 jar mix, mixing well. Spoon the batter into the prepared cups, dividing evenly.

Bake in Preheated 350 degrees F (175 degrees C) oven for 20-25 minutes

just a note Some brands of Baking Powder, Baking Cocoa have gluten. Be sure to check the labels of these items before putting them in the mix as many folks with gluten allergies are extremely sensitive to the slightest amount of gluten!
