Lemon Chicken with Melon
6 chicken breast halves, skinned and boned
1 clove garlic
2 tbs fresh lime juice
2 green onions, minced
1 tsp tarragon
1 tsp salt
1/4 tsp pepper
6 tbs melted butter or margarine
1/2 cup white wine or dry vermouth
1 medium honey dew melon, cut into 12 wedges
Mix all ingredients except chicken and melon in a re-sealable plastic bag. Add chicken, toss to coat chicken. Let marinate for at least three hours.Grill or wrap in foil and place on coals. Grill for five minutes on each side or bake in coals for about 40 minutes. Serve with two slice of melon.
Serves 6.

there are so many good recipes that I want to try, there just isn’t enough meals in a day. 🙂

lol! i soooo know what you mean! lol!
to me this is a basic campfire or grilling recipe and adding the honeydew melon was an attempt to get more fruit in my dd when she was young! apparently, playing with the seasonings and adding the fruit, i finally hit on the right combination to get her to eat and enjoy. what prompted me to post this was that she emailed me wanting the marinade recipe as she was planning for a camping trip for a mayday celebration and thought that this would be a great community contribution…even if she had to pay outrageous prices for the honeydew
