Fudge-Filled Peanut Butter Cookies
Blend:
1/2 cup peanut butter
1/2 cup shortening or butter
1/2 cup granulated sugar
1/2 cup brown sugar
1 egg
Mix together thoroughly in separate bowl:
1 1/3 cup all purpose flour
1 tsp baking powder
1/2 tsp baking soda
Add peanut butter mixture to flour mixture and stir until you have cookie dough texture. Roll into 1-in balls place on cookie sheet 1 in apart, smush a little with fork to make crossing tine marks in top of each ball. Bake 4-8 min in preheated 375 F oven, until bottoms are golden brown.. Remove from cookie sheet to wire rack, cool completely about 30 min.
Filling:
1 cup semisweet chocolate chips
1/4 cup creamy peanut butter
In small bowl microwave chocolate chips uncovered on high about 1 minute or until softened. Stir until smooth. Stir in peanut butter until smooth, cool until room temperature. Sandwich pairs of cookie bottoms together with 1 teaspoon of chocolate mixture. Let stand 1 hour or until chocolate is firm.
