(Serves 4)
1 cup corn
2 cups diced tomato
1 diced red onion
2 red bell peppers, diced
1 Tbs fresh basil
1 can white beans (Great Northern, Cannellini, or Navy), drained & rinsed
1 Tbs fresh lime juice
1 tsp rice vinegar
salt to taste
1.) Combine all & let sit 15 minutes. Add salt & serve at room temp.
