Awesome Sweet Potato Casserole

I recieved this recipe from a sweet lady I used to work with. I was never a fan of sweet potato casserole before this. My family insists I bring this to every family gathering. I might as well not come if I dont bring this! Hope you enjoy....This is so good it is almost like a dessert instead of a side dish.

Sweet Potato Casserole

3 cups cooked, mashed sweet potatoes
1 cup sugar (can use Splenda)
2 eggs or equivalent of egg substitute
1/2 cup evaporated milk
1-2 tsp cinnamon
1-2 tsp vanilla
1/2 cup melted margarine
1/4 tsp salt

beat ingredients well until mixture seems "fluffy" Pour into oven proof container.

1 cup brown sugar (can use Splenda brown sugar blend)
1/3 cup self-rising flour
1/3-1/2 cup melted margaring
1 cup shredded coconut
1 cup chopped pecans

Mix dry ingredients together well. Pour melted butter on top and mix with fingers or fork. Spread over filling.

Bake at 350 for 30-40 minutes.
