Christmas Eve

Everything is done. Last of the packages went off yesterday and all my family got in safe and sound. We didn't get all the goodies made but as I pointed out to my girls there was plenty around to eat. We decided they could make the rest but spread it out over the next week and we'd get a little more each day between now and New years. We got a couple more inches of snow and a little more ice. they had one batch of cookie dough that was a nightmare to work with. We bagged that up and put it in the freezer and will try again in January when we have time and need a treat!

My Share order in November had a 12 pound already cooked frozen turkey so we'll have that Christmas day along with the ham I got. I'll make wild rice dressing to go with it and potato casserole. Cheesy Green Bean Casserole and fresh whole wheat rolls. The girl's are making carrot cake and pecan pie for tomorrow.

I pulled 3 small containers of spaghetti sauce out of my freezer so heated all that up and added a couple cans of tomato sauce so there'd be enough to go around and oh gosh I was so excited! We had enough fresh lettuce and radishes in our basement garden already for a nice home grown salad! the thought of fresh salad stuffs here in this frozen bit of earth is so wonderful to me! Next year we agreed we'd only eat what we could grow along with a few things we'd buy for the coming year. Knowing I can have fresh salads stuff even in the winter is a nice calming thought to me! I really think I can do this now! I'll most certainly start it growing in August this next time around!

Well, I promised them my famous cheese ball to go with all those sweets so I better get to it!

Cheese Ball:

16OZ cream cheese
1 pkg Dry Ranch Dressing Mix
handful chopped green onions or chives
1 jar dried beef chopped

Mix together into a ball and then roll ball in Seasoned pepper. Serve with Crackers, ect.

I can forget the presents but I better have the cheese ball! what a hoot but they let me know that's the most important thing for me to do for Christmas & New Years!

We'll watch a movie tonight and eat goodies and then just before bed read the Christmas story. Kimmy woke me up at 2 am with the flu but she already feels much better so we should all be in good shape for our Christmas day.

Hope you all have a wonderful Christmas with your family or friends!
