Frugal Failures- Lava Flop

Following my latest lava cake debauchery, I read a post by a fairly new member requesting carrot and cream cheese lava cake. Having never actually tasted one of these, but yearning too since I read the post, I decided to attempt making one.

I simply prepared my favorite carrot cake recipe & set the batter aside. Next I combined 4 oz cream cheese, 1 tsp vanilla, 1 c. powdered sugar until well blended. Then tossed in a handful of chopped walnuts for good measure.

ID:	1430 I buttered & sugared some ramekins and added a bit of batter, a glob of the cream cheese "frosting" and then enough batter to cover it.

ID:	1432My hopes were that the cream cheese would melt into a lovely creamy goodness that would ooze out of the cake once it was baked.

ID:	1433 Instead, the cake cooked around it, and of course the cream cheese was hot- which doesn't taste very great to me.

The kids- LOVED them, ate them like they were going out of style. For me, well, lets just say I'll add it to my list o' duds.
