Summer is well under way

Just have two beds in garden this year. We are rebuilding the other 35 beds this summer into the fall. It's hard work and I'm trying to redo one bed a week while I am home but it sure does take a toll on me! We tried the easy way of dumping the garden mix onto a tarp and mixing it together but it was to heavy for 2 of us to lift and trying to get all 4 of us together was almost impossible. So went back to the compost tumbler for mixing. Instead of shoveling our bulk compost into wheel barrels and just dumping it, I'm having to fill buckets and haul them and dump those in to the tumbler. I'm trying to do 3 batches a day which is 20 tall buckets of compost to fill, haul and dump. I'm having surgery on Tuesday so will have a week off to recover in more ways than one! Yes, they are finally going to remove a few key benign tumors to stop the pain I've been suffering. My daughters are off to camp this week so pretty quiet around the house with just my son's here. I've been able to run 3 batches of fruit leather through the dehydrator each day this week. The girl's like to help wrap it and next thing I know half the batch is gone! Figure I can get a good supply done shrink wrapped and parked in the basement fridge for our trip in August. I'll do beef jerky with the girl's while the boys are away. Boys eat the jerky and girl's eat the fruit leather! Got to start making wheat thins and getting those shrink wrapped also. I eat the wheat thins so will have to shrink wrap often and not let them lay around! Trying to get a good supply of homemade snacks done up so we don't buy store bought snacks full of chemicals and preservatives. Better get off here and back to work. Just thought I'd check in while I had a few minutes!

    You've got your work cut out for you. Would you mind sharing your recipe for wheat thins? My husband and son's enjoy the tomato basil ones that Nabisco is making. But I only buy them when they are on sale and I have a coupon. You'd make them very happy especially if I can get the seasoning figured out.

    The secret is rolling them really thin! We have lots of fun adding in stuff or putting on new toppings. Some work and some don't, so just see what add ins and topping you have and explore! I also discovered there isn't much difference if you just add everything without running the oil, water and salt through the blender. I roll mine out on a cooking stone and cut them into little squares with my pizza cutter and then take a fork to it to prick holes and then rub my toppings into it and bake. I've never tried tomato basil but sounds good. Think I'll try some sun dried tomatoes and basil and see how that works for us!

    Homemade Wheat Thins

    1 3/4 C Whole wheat flour
    1 1/2 C White flour
    1/3 C Oil emulsified in blender with 3/4 tsp salt and 1 cup water

    Mix dry ingredients, add oil/water mixture. Knead as little as possible.
    Make smooth dough then roll as thin as possible on cookies sheet

    (not more than 1/8 inch). Mark with knife to size of crackers desired, but

    do not cut through. Prick each cracker a few times with fork. Sprinkle
    lightly with salt or onion salt as desired. Bake at 350 F until crisp and light brown for 30-35 minutes.
