Food Snobbery & a Dirt Cheap Dinner Idea

I have a confession to make... I have become a food snob. I love cooking with fresh fruits and vegetables, tossing in freshly snipped herbs, scallions or freshly minced garlic. Two things that I absolutely hate.. store-bought canned vegetables and ugly meals with no color.

With that said, sometimes it isn't as easy as it sounds to dress up the looks of a dish.
Here is one of my favorite "comfort food" dinners that is healthy, dirt cheap, filling, and takes less than 15 minutes to prepare.

  • 1 Head of Cauliflower, wash & cut into flowerettes/stem pieces
  • 1 lb Ground Turkey (or Beef)
  • 1 pkg Taco Seasoning Mix (MYO!)
  • 1 can diced tomatoes (home-canned or storebought) 12-14oz , UnDrained
  • Sharp Cheddar Cheese, shredded/grated

  • Sliced Jalepeno Peppers (pickled)
  • Black Olives
  • Dab of Sour Cream

Steam the cauliflower until soft. (I use the ziploc steam bags and this part takes exactly 6 minutes in a Large bag).

ID:	3993While the Cauliflower is cooking, brown 1 lb of ground turkey in a large pan, drain off any excess fat.
Add 1 can un-drained Diced tomatoes & 1 pkg taco seasoning mix, (once again, I make my own in large batches and keep it on hand).
Mix well, reduce heat, simmer 2 minutes.
Place steamed cauliflower in bowl or plate, pile on the seasoned meat, top with shredded cheese.

For additional zip add a few slices of pickled jalepeno peppers, some halved black olives and even a dab of sour cream.

This recipe is super easy, very filling and dirt cheap. It's wonderful for folks who are following the South Beach diet or diets low in Carbs and saturated fats.

Approximate Cost of the Meal for the Entire Family:

1 Cauliflower.............. $1.29 (Aldi's)
1 lb Ground Turkey: ....$1.19 (Aldi's)
1 Pkg Taco Seasoning: .25 (or less)
1 can Diced Tomatoes .84 (walmart) or .26 Home-Canned
1 c. Shredded Cheese $1.00 (figuring on 1/4 c. per person)

Total Cost of Meal to Feed 6 people: $ 4.57 (or .76 each)

    I too Liss am a food snobby! I started making my own Mayo, I make my own taco seasoning, chop my own jalpenos.......nothing wrong with being this way. It saves our families money!! You go girl!
    Thanks for all the wonderful money saving ideas. I am using so many of them, and now think where would I be if I didn't follow them!
