Can't Do Without Recipes

I have several recipes that are MY favorites, feeling that I can't do without them! Some are simple, quick and easy, some a bit more time consuming but one thing they all have in common - they're good, inexpensive for the most part, and requested by friends and family.
Thought I would post some of them here a bit at a time for you to try if you'd like - and for safe keeping...not to mention - if I get another request I can just say...check the Budget101 site...not only will you get the recipe but learn a lot in the process!
One for Labor Day weekend - to go with that 'last' grill for the summer...for some anyway! LOL
CROCKPOT POTATO SALAD
3# Red Skin Potatos
6 Ribs Celery, sliced thinly
1 medium Onion, chopped fine
1 teasp Dill Weed
1/2 Cup Mayo
1 Cup ( 8 oz.) Sour Cream
1/2 teasp Celery Salt or Regular Salt
1/4 teasp Black Pepper
Wash potatoes well, dry on paper towel and load into at least a 3 quart crockpot. Cook on low till done about 6 hours - turn off and let cool for about 2 hours. You can remove potatoes and chill in fridge if you like to prepare the next day - or remove and let cool till easy to handle.
While the potatoes are cooking prep the celery and onion and store in fridge till you're ready to assemble the salad.
Cut each potato in half them slice cooled or chilled potatoes into 1/4" rounds into a large mixing bowl, add celery and onion and toss gently. In a smaller bowl mix mayo, sour cream, dill weed, salt and pepper. Add to potatoes in larger bowl and stir gently. Cover and chill till ready to serve.
You may peel the potatoes if you like before slicing - I like them with the skins. This recipe is versitile - add crumbled cooked bacon, 3 to 4 chopped hard boiled eggs, and/or a couple tablespoons of mustard - brown grainy or regular yellow to taste...
