They must sell much smaller chicken breasts in other areas- we use 2 boneless skinless breasts for 4 people and Always have enough for leftovers the next day. We like this recipe, but I usually toss in a couple handfuls of fresh cranberries & 1/2 a finely chopped (peeled) apple in the stuffing mix, and we use the copycat stovetop mix from here on the site.

When boneless, skinless chicken breast are rather large, I usually slice them in half horizontally or half out the thickness of the chicken by slicing it in half flat wise. ((Sorry, I don't remember the name of the cut))
You can also slice it in half, cover with wax paper, then gently pound it out a little. It'll be large, but thinner, like cutlets.

This sounds yummy... when i don't wanna have big chicken breasts, I look for chicken tenders, or just cut the breasts in half... Definitely saving and trying this soon.

I like the idea of adding the apple & cranberries to the stuffing. I'm going to make this recipe with those additions after my next grocery shopping trip.

I made this for a Teachers Appreciation PTA event last week. It went over really well! I slightly shredded the chicken just a little right before it was served. I'm making it for my family tonight with mashed potatoes and green beans...maybe a little gravy, too.

I've made a similar recipe in the past and it is great - quick, easy, with ingredients I usually have on hand. This appears to have some things I haven't put in mine. Unfortunately there is an ad that is covering almost the entire ingredient list that I can't get rid of. Help!
