Having grown up in New England, I have a strong affinity for anything containing seafood. Unfortunately, seafood has a tendency to be rather pricey. Here's my relatively inexpensive savory crab stuffed mushroom recipe. . .- 6-9 Large Mushrooms
- 3 slices Swiss Cheese
- 2 T. Parmesan Cheese
- 1/2 Sleeve Ritz
Crackers, Crushed
- 1/2 stick Butter
- 2 -3 T. Crabmeat (I used canned)
- 3 T. Chopped Red Onion
- 1/2 tsp Old Bay Seasoning
- 1 tsp minced garlic

Preheat the oven 350F
Wash the mushrooms, then carefully remove the stems, hollowing out the center of each mushroom.
Chop the stems finely, set aside. Chop the onion finely, set aside
Melt the butter in a medium saucepan.

Saute the chopped onions & mushroom stems in the butter until softened. (The onions will be translucent.) Add the Crab, saute 30 seconds. Add minced garlic and old bay seasoning.

Add 1/2 sleeve crushed ritz crackers, saute about a minute. Add 1 sliced swiss cheese (Finely chopped) & parmesan cheese.

Stuff the mushrooms

Add a small piece of sliced swiss cheese to the top of each mushroom.
*optional Step*
Drizzle 2 T. Butter Melted with 1/4 tsp minced garlic over the mushrooms before baking. This step is optional, but very delicious!!
Bake at 350 for 6-10 minutes (until the cheese is melted and bubbly).

- 2 -3 T. Crabmeat (I used canned) .65 ($1.96 can/ recipe uses 1/3 can)
- 3 T. Chopped Red Onion .25
- 1/2 tsp Old Bay Seasoning .10
- 1 tsp minced garlic .03 ( I purchase Large 2# containers of minced garlic & keep it on hand: $4.50/181 servings)
