    • Healthy Rich Chocolate Brownies

      Flourless Zucchini BrowniesWhat could be better than rich chocolate brownies? Healthy, Rich Chocolate Brownies! You won't find flour and sugar in this recipe, but you will find fresh zucchini, honey and a secret ingredient that makes these brownies so moist and delicious that your family will beg you to make more . . .
      This
      is one of those recipes that is so simple to make it barely requires directions!

      * 1 cup of almond butter
      * 1 1/2 cup of grated or very finely chopped zucchini
      * 1/3 cup honey
      * 1 egg
      * 1 tsp of vanilla
      * 1 tsp of baking soda
      * 1 tsp of cinnamon
      * 1/2 tsp of nutmeg
      * 1 cup of dark chocolate chips

      Preheat the oven to 350F

      In a large bowl or mixer combine all the ingredients, mixing well. Pour into a 9"x9" pan that has been sprayed with non-stick spray.

      Bake at 350F for 35-40 minutes.

      To make this dish gluten free, use gluten free chocolate chips! Rather than using store-bought almond butter, we generally make our own, it's easy to make and about 1/4 of the price of store-bought almond butter.

        I was so excited to make these today! I ended up making a double batch and put it in a 9" X 13" baking dish. The chocolate chips basically stayed on the bottom, so it became a kind of chocolate layer. I was thinking that next time, I would melt the chocolate chips before mixing them into the batter to get the chocolate more evenly distributed. Any tips?

        what is almond butter? Can I use peanut butter in place of it? I have never seen it around here....

        Almond butter is ground almonds, just like peanut butter is ground peanuts. It is milder and a bit sweeter in flavor and has a more favorable omega 3 profile.

        This sounds like the right way to go. Another option would be to chop up the chips as smaller pieces will distribute in the batter more evenly. I'm going to try these tonight, along with the totinos pizza roll clones using wonton wrappers. Fun!
