Rotini with Ricotta and Basil Sauce
Rotini with Ricotta and Basil Sauce

3 tbs basil
salt, to taste
1 lb pkg rotini
1 1/4 cups ricotta (can substitute cottage cheese)
1 garlic clove, finely chopped
1/3 cup olive oil
1/8 tsp nutmeg
pepper, to taste
1/4 cup Parmesan
Cook the pasta according to directions. Meanwhile, combine the remaining ingredients for the sauce, blending well with a wooden spoon. Add tablespoons of the pasta cooking water, if necessary, to form a smooth, creamy-textured sauce. Drain the pasta and combine it thoroughly with the sauce. Serve immediately. 4 servings = about 785 calories.mos

per serving...a bit less if you use cottage cheese instead of ricotta.
