    Default Substitute beans/lentils in recipes

Substitute beans/lentils in recipes-b101-legumes-sm.jpgToday I made a box of hamburger helper according to directions but added 1 cup of cooked lentils to it instead of hamburger....tasted great & was very filling & I have leftovers for dinner tomorrow. I bought a 1 lb bag of lentils the other day for 45 cents.

I made a box of Zatarain's Dirty rice & substituted a can of pinto beans instead of meat & it also turned out delicious.

I've also mixed canned/rinsed garbanzos or navy beans with a little mayo, celery & pickle relish for a yummy "faux" tuna salad!

Beans/legumes are SO cheap & full of nutrition....switch 'em a few times a week for meat & watch your grocery bills go down!

Lentils are a great idea. In fact I made up a large pot of chili beans this evening and it didn't have any ground meat in it at all only lentils and the family was none the wiser except the hubby who prefers vegetarian options but my dad who is a devout carnivore devoured two bowls.

I had been thinking about trying this, I'm glad to hear it works so well. Even better, now I have a measurement to go off of, instead of trying to figure it out myself!
