      Default Grilled Steak with Herb Butter

      You can easily substitute salmon steaks for this recipe.
      Grilled Steak with Herb Butter
      1 tbs basil
      1 tbs chopped pistachios or hazelnuts
      1/8 tsp lemon juice
      1 small clove garlic, minced
      1 1/4 tbs butter, softened (NOT margarine)
      1 tbs grated Parmesan cheese
      Salt and pepper to taste
      2 rib eye steaks OR salmon steaks
      In food processor or blender, combine all ingredients except steaks. Process or blend till mixture is even. Cover the blended butter and chill this mixture and then form it into a roll 1" in diameter. Wrap in waxed paper and chill until firm, up to 24 hours. For longer storage, freeze the butter.
      Prepare and preheat grill. Grill steaks 6" above medium coals, turning once with tongs, until steak is cooked to desired doneness (and salmon flakes when tested with fork). OR place on broiler pan and broil 4-6" from heat source for 10-15 minutes, turning once with tongs, until steak is cooked to desired doneness. Let the meat sit for about 5 minutes before serving, then slice the chilled butter and place on top of the hot steak, letting it melt into the meat. Serves 2.

      Your herb butter sounds divine. Have you tried this on chicken yet...or other fish like talapia? Goodness, I bet this butter would be good on anything.

      This herb butter is good for just about anything;-D With catfish, I do prefer to use chpd pecans, but that is the only difference. Increase the herb butter recipe to use on a pork tenderloin (that you find in the mark-down bin)...oh my...so good!

      This Grilled Steak with Herb Butter is perfect for a date with someone or your partner in a romantic set-up dinner. Especially, if a guy are the one who prepared for this. A perfect cuisine partner with red wine would be a perfect romantic date.
