  1. Gourmet Oriental Cheese Sauce Noodles
    serves 4

While slapping dinner together one night I created this concoction that I found to be crazy good. This is probably one of the most expensive recipes on here, but if the vegetables are bought in season and you stretch out the Fontina cheese it can be affordable. In most areas, the vegetables will be in season between Summer and Fall.

With the Fontina Cheese, buy 1/2 lb. (around $5) and divide it into threes. You still get the creaminess of the Fontina for sauce, but now you can make three batches of sauce.

    Ingredients:
    4 pkg Oriental Ramen Noodles
    1 Yellow Squash (fresh)
    1 Large Carrot (fresh)
    1/2 lb. Green Beans (fresh)

    Sauce Ingredients:
1-2 tbs Finely Chopped Anaheim Pepper
    1 tbp Vegetable Oil
1 tbp Flour (white or whole wheat)
    1/3 cup Milk (preferably whole)
1 cup shredded Monterrey Jack Cheese
    1/6 lb. shredded Fontina Cheese

    Directions:
Cut up the Yellow Squash and Carrots into rounds. Quarter the yellow squash if the rounds are too large. In a saucepan add water about 1/2″ deep, put in the steamer, and bring water to a boil.

Add in yellow squash, carrots and fresh green beans. Turn burner down to med-low, put on lid and steam for 7 minutes.

At the same time, bring to boil water according to ramen noodle instructions for four packages. Follow package instructions for cooking except add in the oriental spice packet while boiling. Drain the Water.

After starting the water for the ramen noodles, heat up a skillet on medium heat for the sauce. After roughly 5 minutes, add in the oil. Let the oil heat up a little then add the flour then wisk together.

Once the mixture starts to thicken, dump in the finely chopped Anaheim peppers. Right after, start slowly mixing in the milk, continuing to mix through the whole process. While continuing to mix the sauce, add in the Monterrey Jack Cheese and Fontina.

If the sauce seems too thick you can slowly add in more milk.

To dish up, plate the noodles, then top with the steamed vegetables, then drizzle the cheese sauce over both.

    Suggestions:
If you want to add meat, diced ham would be a good choice. Just add it to the ramen noodles while cooking to warm it up. I usually buy a half oblong of boneless ham, then slice it in 1/4″ to 1/2″ pieces and freeze them.

Take one piece thawed and cube up the ham. This process stretches out the meat as well.

  2. College Night Guilty Pleasure: Ramen Style
so this recipe was created one morning when I was craving ramen and a chicken wrap so i combined them and it was the best thing I’ve ate on a tight budget. When I was babysitting one night i tried this with the kids and they loved it. This recipe is the single serve and it is definitely a guilty pleasure.
    Serves 1
    Ramen recipe:
    ingredients:
2 or 3 Chicken strips chopped
    1 pck.

Maruchan Ramen (beef, chicken, or oriental)
    1 cup Shredded cheese
    Soy sauce

    Sauce Ingredients:
    4 dollops Sour Cream
    4 spoonfuls of Mayonnaise
2 shakes of Season all or tony’s creole seasoning
    2 teaspoons Soy sauce
    Salt and pepper to taste

    Directions:
Place chicken strips in the microwave for 1 min 30 sec. Take out and turn over. Place back in the microwave for another 1 min.Next put ramen in a bowl.

Add water and place in microwave for 5 or 6 minutes. While this is cooking chop up the chicken strips and cover. In another bowl add sour cream and mayonnaise.

Stir until combined. Add season all or tony’s then add soy sauce. Take ramen out of the microwave and strain all the water out.

Add packaged seasoning to ramen. Next add chopped chicken and Shredded cheese. Add sauce and stir until evenly incorporated.

    Suggestions:
I like to add hidden valley ranch seasoning from time to time or you can scramble up 2 eggs with a tsp of soy sauce when scrambling eggs and adding those into my ramen. Chicken or oriental ramen works better than beef but either way super tasty. Or you can put it in a tortilla for an on the go guilty pleasure!

  3. So Ramen is probably one of my FAVORITE foods ever and has been since I was little kid, which means I have PLENTY of recipes that I have created or cometo share with you guys.

My first recipe used to be my go to before I decided to branch out a little more, but it’s still a classic go to. I reccomend this for a night in, but if you modify the measurements your party guests will love you. Otherwise this will serve one.

    Ingredients (base):
1 instant ramen noodles pack (I prefer using Maruchan but other brands will work)
A few grilled pearled onions (or a few slices of grilled white onion)
2-4 pieces of Trader Joe’s dried seaweed snacks (you’ll thank me later)
    OPTIONAL marinated Omaha beef
(I just use their premium beef flank cuts, but feel free to experiment.)
(Also grilled Chicken from your local supermarket is also good.)

    Ingredients (broth):
1 tbsp Worchester steak sauce (only if you used steak in your base)
Imagine ramen broth (available at Whole Foods), read back for quantity.
Optional thickened soy sauce (do not add too much though due to the salt content)

    Optional add ons (strongly recommended!):
    1 tbsp black caviar
    Poached egg/s
    Cilantro to taste
A thinly sliced “branch” (I don’t know the proper terminology) of scallion
    Sesame seeds to taste

    Optional sides (YUM!)
    pickled seaweed
    pork or beef gyozas

Enjoy and let me know how it was!

Also, I forgot to mention that the regular seasoning packet that comes with the noodles is fine to use as a substitute for the broth recipe that I gave.

    Enjoy!

  4. OK, I got a Ramen recipe that will knock your taste buds off.
I call it ‘Buddhas Gold Ramen’

Use any two packages of ramen noodles, I usually like the creamy chicken, but it works with any ramen flavor packets.

All ingredients are approximately ONE TEASPOON,
in 3 cups (Hot) distilled water with ramen noodles and the included flavor packet the noodles comes with.

    1. Curry Powder
    2. Ground Turmeric, and I use Curcumin 95%, but regular Turmeric works as it’s cheaper.
    3. Nutritional Yeast.
    4. Powdered peanut butter.
    5. One shot of Roscato Red Wine
    6. One slice of Kraft Swiss cheese (it melts to a liquid in the hot water, just stir it in to the mix).
    7. Chai Protein Powder

Boil the 3 cups of distilled water,
add all ingredients but the cheese, and stir to mix before adding the noodles.
Add noodles and microwave for 3 minutes, then add cheese slice and mix in, then serve one tasty meal. It’s really good!
