Making your own copycat oreo cookies is pretty easy, it just requires a store-bought cake mix and a few minutes of time, they’re well worth it!
While we normally recommend using homemade mixes, in this case, it didn’t work out so well, the cookies just didn’t crisp up like Oreo wafers. If you don’t mind slightly chewy (almost) Oreo’s then use a homemade cake mix. Otherwise, splurge for a dark fudge cake mix.
If you want to create fun designs in your cookies, just use a cookie stamp.
Copycat Oreo Cookies Recipe
Cookie Wafers
1 (18.25 oz) box Dark Fudge Cake Mix (Tried using the homemade recipe, didn’t taste like oreos)
1/3 cup water
2 tablespoons shortening
Creme Filling
3 1/2 cups powdered sugar
1/2 tablespoon granulated sugar
1/2 teaspoon vanilla extract
1/2 cup shortening (no substitution)
3 tablespoons hot water
Preheat the oven to 325F.
Combine cake mix and shortening, and add water. Mix well into a very thick dough, then scoop into 3/4 inch balls (a melon baller works great!), and place them on parchment paper. Use the bottom of a glass to press them flat. They should be spaced about 1/2 an inch apart to keep them from running together during baking.
Bake for about 5 minutes. Cool
Make the filling by combining the powdered sugar, granulated sugar, vanilla, and shortening in a mixing bowl or KitchenAid mixer. As it’s mixing add hot water 1 Tbs at a time as needed. Fill in the cooled cookies.
Makes two dozen cookies (4 dozen wafers)
