4 Cups Pineapple
1 c. Coconut Cream (from a can of coconut milk, see directions)
2 Tbs Honey (Optional)
First and foremost, it really doesn't matter what you use for pineapple, you can use canned chunks or slices or fresh pineapple, BUT, you'll have to Freeze it solid first.
Refrigerate a can of coconut milk overnight, remove the top and scoop out the Coconut Cream that has formed
Combine the frozen pineapple, honey and the coconut cream in a blender, whipping quickly to create a smooth pineapple soft serve. If you want soft-serve swirl effects you can transfer the mixture to a gallon ziplock bag with a large swirl frosting tip attached to it, then squeeze it out into decorative containers.
The honey is entirely optional and only if you feel it needs a touch more sweetness.
If you freeze the mixture, it will become a hard solid chunk again that will need to be re-blended prior to serving.
