      Tahini Paste is crucial for flavoring in various dishes such as hummus, baba ghanoush and halvah, but it can be difficult to find and expensive. Here's a simple, do it yourself recipe that offers great flavor and will keep for several months in the fridge.

      You'll need:
      Sesame Seeds
      Olive Oil (or Peanut oil or Sesame Oil, depending on your tastes)

      For every 1 cup of lightly toasted Sesame Seeds (hulled will give a smoother paste with a milder flavor) add 2 to 3 Tablespoons Olive Oil (Begin with 2 Tablespoons and add more if needed to get to the desired consistency.) Process to a smooth paste. This will make approximately 3/4 cup Tahini.

      FYI:
      To toast sesame seeds -- Spread the sesame seeds on a shallow baking tray and bake in a preheated 350 degrees F oven , shaking frequently, until fragrant. (around 5 minutes in my oven) Do not allow them to turn brown. Cool before placing in processor.


      Frequently sesame seeds can be found online for around $5 per Pound. Check your local health food store for deals on bulk sesame seeds.

      To make a Simple Tahini Sauce:

      • 2/3 cup tahini paste (recipe above)
      • 1/2 cup water
      • 2 Tbs fresh lemon juice
      • 1 clove garlic, crushed
      • 1/4 tsp salt

      Combine all in a small food processor for 30 seconds. This is great on Felafels!

        I usually toast my sesame seeds in a non-stick frying pan. Just cover the pan with the seeds and toss them around to brown, being very careful though as they can become over toasted in a flash.

        I have to try this! Buying tahini past at my local Giant is expensive!
