• Copycat Jimmy Dean Breakfast Sausage

    Making your own sausage is relatively simple and these copycat Jimmy Dean breakfast sausage seasoning blends will having everyone in your family begging you to make more. Pork Butt is a relatively inexpensive cut of meat (frequently only $1.48 a pound) and comes in a very large cut of meat (usually 12-18 pounds at a time).

    We generally purchase a large pork butt and cut it into 4 equal pieces which become 2 nice roasts and several pounds of sausage. If you have a kitchenaid mixer, they have a grinder attachment available for making your own sausage. However, if you don't have a mixer or a meat grinder at home, be aware that Most butchers/ meat department employees will be more than willing to cut and grind up your pork for you at no extra charge, all you need to do is ask them.

    For Sage Flavor Breakfast Sausage

    You'll Need:

    * 16 ounces ground pork
    * 1 teaspoon salt
    * 1/4 teaspoon Garlic Salt
    * 1/2 teaspoon dried parsley
    * 3/4 teaspoon ground sage
    * 1/4 teaspoon fresh coarse ground black pepper
    * 1/4 teaspoon dried thyme
    * 1/4 teaspoon crushed red pepper flakes
    * 1/4 teaspoon ground coriander
    * 1/4 teaspoon msg (*Optional, but this is what they use)
    * 1/8 teaspoon Oregano

    for Hot Breakfast sausage
    * 16 ounces ground pork
    * 1 teaspoon salt
    * 1/2 teaspoon cayenne pepper (or more, depending on how hot you want it!)
    * 1/4 teaspoon rubbed sage
    * 1/4 teaspoon fresh coarse ground black pepper
    * 1/4 teaspoon crushed red pepper flakes
    * 1/4 teaspoon coriander
    * 1/4 teaspoon msg (*Optional, but this is what they use)

    or for Maple breakfast sausage

    * 16 ounces ground pork
    * 3 tablespoons maple syrup
    * 1 teaspoon salt
    * 1/2 teaspoon msg (*Optional, but this is what they use)
    * 1/4 teaspoon coriander
    * 1/4 teaspoon Black Pepper

    The method for making any of the types of sausage is the same, mix the seasonings into the meat. It's best if you do this ahead of time to give the flavors a chance to incorporate, but it will still taste great if you cook it right away.

    Once you have your sausage mixed, Then form into patties using your hands. cook as you would Jimmy dean breakfast sausage.

    We've also used ground turkey in place of the ground pork and had good results . While msg is generally a frowned upon ingredient, it does offer great flavor or it can be left out altogether without any issue.

      I am printing this recipe off almost as we speak. My hubby had a 5-bypass heart surgery in July and then had a heart attack the end of august. He is also diabetic. I am going to make this sausage with turkey or chichen. He really dislikes the turkey sausage I buy at the store. I think it is not seasoned enough. I lost my sense of taste, almost completely, a few years ago. If it is a really strong or spicy taste I can taste to an extent. I have lost 22 pounds and hope to lose 35 more. You just lose the desire to eat when the taste is not there. Neddless to say I have to have taste testers around to make me happy about cooking now. Texture has become very important to me now. You really notice texture of food when it is the only thing you got. Hey, everyone have a Great Turkey Day!

      Does this require msg or accent or is there something else that can be substituted? My husband does not tolerate either well. When we can and freeze we avoid them and use lemon juice instead.

      If you are avoiding msg, please do not use Accent, I looked it up and Accent and msg is the same thing. Sorry.

      Accent is not a substitute for msg. It IS msg. Ac'cent Flavor Enhancer - Food Seasoning & Flavoring - Accent Flavor
      (Check the ingredients on the right side of the page, just above the nutrition facts. Only one is listed, because that is all Accent contains.)
      I mention this for those who may be sensitive to msg and are not aware of what Accent actually is.

      if you don't have a grinder or the butcher is busy or cranky (I am lucky I have both a meat grinder and an awesome butcher) you can chunk up the pork into about 1" cubes and pulse it in your food processor till it's ground up as you like. just don't grind too much or you will have meat paste. Oh and don't buy pre ground pork. most of the time is horribly expensive and they add salt too it already which can really mess up your recipe. Also try blends of meats like add some ground chicken thighs or ground turkey. both you can sometimes get really cheap on sale and grind yourself and then have the bones for soup.

      I'm definitely going to make up a batch of sausage, with this recipe, my hubby has to have his sausage and the price just keeps going up....We have never cared for the turkey sausage from the stores but I may just have to try a pound or so ground turkey with this recipe..       We LOVE Jimmie Dean sausages. I was raised on them and make large batches of breakfast burritos to deep freeze with them. In fact, I need to make some this week. I have the KA attachments and have yet to use them so this is perfect! Thank you so much for telling me what kind of meat to purchase. I didn't know. And because i live in a predominantly hispanic community, the pork shoulder or butts go on sale a lot this time of year for making tamales. They can be frequently found for under $1 a pound!!! And I have a bunch of boneless chicken leg meat that I got for well under $1/lb that is a pain to clean up to use (I thought it was just thigh meat, but it's leg meat and thigh so I have to cut around all the tendon junk), that will be great to combine with the pork to make a lighter sausage. Thank you SOOOO much!!!

      Do you think I can mix deer meat with this? I have about 150 labs of deer meat to use.

      In answer to your question YES deer meat can be added to pork. If you add it to chicken add pork fat. Deer meat is very lean and needs the fat. Also when you fry Deer Meat add butter or it smells. I hope this helps.

      I know I'm late to the party but I just found this recipe via Pinterest. I have been living in Ecuador for the 4+ years and breakfast sausage isn't in the stores here. Well, I suppose it might be somewhere but it isn't in the stores were I shop. I've been managing without it but it's been one of the few things I miss. This is pretty darned exciting. I'm not sure I've ever seen coriander but I'm sure at least one of my friends will share some with me until I can get some from the States. I have lots of friends who travel back and forth and we all try to help one another by bringing back little stuff when we can. My only potential problem here would have been getting pork that is fatty enough to make a decent sausage--even Jimmy Dean. Now, however, we have someone who has been raising pigs and making bacon, ham, and sausage. Unfortunately, his sausage has red pepper in it and I'm allergic but he's happy to give me pork fat to add to the pork I buy locally. Aren't I lucky? I can hardly wait! Thanks so much for going to all the work to figure this out for us.

      I tried this recipe yesterday and it is so awesome. Fortunately I have a kitchenaid with a grinder attachment. I went to the store to get pork butt as it was on sale, only 99 a pound! I thought to save time I will just have the butcher grind it for me. Ah no, the butcher said, "Oh no, we don't do that!" Oh well! The recipe was fantastic despite that little hiccup. I ended up with 9 lbs of sausage for about $9.00! I will be doing this again!!!! Thank you so much!!!
