      These Race Day Sammies are quickie snacks that are simple to make, offering rich dark chocolate flavor imparted with a vanilla enhanced sweetened cream cheese filling and can be made bite size or hand size depending on the party you have planned! Oh, by the way, they'll absolutely Melt in your mouth . . .
      You'll Need:

      2 Chocolate Cake Mixes
      4 eggs
      2/3 c. Oil

      1 pkg Cream Cheese, softened
      2 c. Confectioners Sugar
      1 tsp Vanilla extract

      In a large bowl combine cake mixes, oil and eggs until well mixed. Using a cookie scoop, drop the dough into balls about 2 " apart on a cookie sheet. Flatten each dough ball. Bake for 12 minutes in a 325 oven that has been preheated.

      While the cookies are baking, in a large bowl combine the cream cheese, confectioners sugar and vanilla. If you'd like you can cut a pure vanilla bean in half and scrape the seeds out and add this in place of the vanilla extract. The little speckles impart a delicious flavor into the filling!

      Remove the cookies from the cookie sheet and cool them completely on a cooling rack before filling.

      Fill with as much filling as you prefer, serve! These are so simple to make!

      Soak orange peels in vinegar for two weeks in a sealed mason jar or old mayonaise jar. Then pour the vinegar into a spray bottle. Use for cleaning or bug spray. This is great for ants!

      I like to substitute the Oil with applesauce they change over in equal parts on the measurements & add a small box of pudding mix into the batter.
