Diabetic Chocolate Covered Pecans

Chocolate Covered Pecans

1 ounce unsweetened baking chocolate
2 tablespoons butter
2 tablespoons heavy cream
1/4 teaspoon vanilla
7 packages artificial sweetener of your choice
1/2 cup pecan halves
1/2 teaspoon cinnamon

  1. Put pecans, two packages of the sweetener, and cinnamon in a bowl with a lid and shake until coated.
  2. Melt chocolate and butter, add in cream, vanilla, and the rest of the sweetener. Mix well until smooth.
  3. Mix in pecans or dip them one at a time in the chocolate mixture, place pecans on wax paper or a plate and chill.

  1. Thank you, I tried these using Equal sweetener, and they were good, but after seeing all of the Keto recipes on the site using Bochasweet, I opted to give that a try on the second batch. It literally tastes like regular chocolate covered pecans, no strange aftertaste. It’s nice to be able to have decent quality chocolate again.
