This Jam is wonderful fragrant and melts in your mouth with a hint of spices to enhance the natural flavors.
Hopefully, you've already Prepared your Peaches .
Once your peaches are pitted and peeled, you'll need
1 Quart finely chopped Peaches
Add 1/4 c. Lemon Juice to your
fruit, stir.
In a Spice Bag** Combine
1 tsp. Whole Cloves
1/2 tsp. Whole Allspice
1 Cinnamon Stick
[I] **for a spice bag I use the reusable muslin tea bags that are available at health food bags or in your local grocery store in the teas/organic foods section. They generally come in a bag of 12 for about $1.50 and are reusable**
In a Lg. saucepan Combine
7 1/2 c. Sugar
Fruit/Lemon Juice Mix
Spice Bag
Bring it to a boil (slowly!) over med heat until sugar is fully dissolved. Stir in 1 Pouch of Liquid Pectin and allow it to boil Hard at a rolling boil for 1 full minute.
Remove from heat & Remove spice Bag, be careful not to touch it!
Ladle into hot prepared jars, (skimming foam if necessary), leaving 1/4" headspace. Adjust two-piece caps and process in boiling water bath for 10 minutes.

lol, yeah, if you lived closer it'd be easy! We learned the hard way that shipping jars doesn't work so well. You have to Ground Ship, or they "Pop" during air travel. Brought home a few jars of pickles and it was a slight mess. The bonus? getting to meet the TSA up close and personal while they ran us through security a dozen times trying to determine whether our pickles were bombs. Oy!
