
Black Bean Bagel Sandwiches

1 can (15 oz)black beans, drained, rinsed
1/3 cup Thick 'n Chunky salsa
1/4 teaspoon ground cumin or chili powder
4 bagels, cut horizontally in half
2 plum (Roma) tomatoes, sliced
Lettuce leaves
1. In food processor or blender, cover and process beans, salsa and
cumin until smooth.
2. Spread 1/4 cup bean mixture over each of 4 bagel halves. Top with
tomato, lettuce and remaining bagel halves.

Beef Fajita Pitas

1/4 cup Thick 'n Chunky salsa
2 pita (pocket) breads (6 inch), cut in half to form pockets
3/4 lb thinly sliced deli cooked roast beef
1 small red bell pepper, cut into 1/4-inch strips
4 slices (1 oz each) Monterey Jack cheese
1. Spoon salsa into pita bread halves.
2. Fill pita breads with beef, bell pepper and cheese

Ham Bagels with Honey-Mustard Cream Cheese

Makes:4 sandwiches
1/2 cup whipped cream cheese spread
2 tablespoons Dijon mustard
1 tablespoon honey
4 bagels, cut horizontally in half
8 ounces deli-style sliced fully cooked ham
1. In small bowl, mix cream cheese, mustard and honey.
2. Spread cream cheese mixture over cut sides of bagels. Fill bagels
with ham.

Greek-Style Tuna Salad Sandwiches

Makes:4 sandwiches
1 can (12 ounces) tuna, drained and flaked
1/2 cup chopped drained roasted red bell peppers (from 7-ounce jar)
1/2 cup crumbled feta cheese or shredded mozzarella cheese
1 medium stalk celery, chopped (1/2 cup)
1 loaf (1 pound) French bread
1/4 cup Italian dressing
1. In medium bowl, mix tuna, bell peppers, cheese and celery.
2. Cut bread into four 4-inch pieces; cut each piece horizontally in
half. For each sandwich, remove some of the bread from center of
slices; discard bread or save for another use.
3. Drizzle dressing on cut sides of bread; spread over bread. Fill
each sandwich with 1/2 cup tuna mixture. Serve immediately, or wrap
securely with plastic wrap and refrigerate up to 24 hours.

Fudgy Brownie Sundaes

Makes:18 sundaes
1 package brownie mix (with chocolate syrup pouch)
1/3 cup water
1/3 cup vegetable oil
2 eggs
Ice cream, any flavor
Sliced strawberries and bananas, if desired
Assorted toppings or sauces, if desired
Chopped nuts, if desired
Whipped cream, if desired
1. Heat oven to 350ºF. Grease bottom only of rectangular pan, 13x9x2
inches.
2. Stir brownie mix, chocolate syrup, water, oil and eggs in medium
bowl until well blended. Spread in pan.
3. Bake 28 to 30 minutes (bake 25 to 27 minutes if using dark
nonstick metal pan) or until toothpick inserted 2 inches from side of
pan comes out clean or almost clean. Cool completely for easier
cutting, about 1 hour. For 18 brownies, cut into 6 rows by 3 rows.
4. For each serving, place brownie on serving plate; top with
remaining ingredients.
